France Baked Brown Mushrooms with Burnt Butter

Back to school dinners don’t need to be boring, and this moreish mushroom side is no exception. Luscious burnt butter gives a nutty aroma and deep flavour  that lifts the earthiness of the mushrooms to perfection. Capped with a mouthwatering crisp of parmesan cheese, this side from the kitchen of Jackie Cameron is certainly a showstopper!

 

Ingredients:

●      40 g Butter, Salted

●      3-4 large brown mushrooms

●      250g cream cheese

●      50g sundried tomato

●      50g fresh coriander, chopped

●      ½ onion, chopped

●      Juice of 1 lemon

●      Salt and pepper

●      50 g parmesan, grated

 

Method:

Place a piece of butter and a splash of water into each mushroom. This will help it to cook properly. Mix the Cream Cheese with the rest of the ingredients, except the parmesan, and mix well. Spoon the mixture into the mushrooms and sprinkle the parmesan over the top. Place in the Defy Airfryer at 180˚C for 10 minutes. Increase the temperature to 200˚C and cook for 5 minutes more until golden brown in colour.
