Creamy Tomato Soup Recipe

Prep Time : 5 minutes

Cook Time: 50 minutes 

Serves 6

 

Ingredients:

●      1 TBSP Butter

●      ½ Onion, diced

●      4 Cans Diced tomatoes (use 400 g cans)

●      2 TBSP Sugar

●      1 Cup (250 ml) Chicken broth

●      1 TBSP Dried basil

●      ½ Cup (125 ml) Heavy cream

 

Method:

  1. Heat the Multi Cooker on Sauté and add the butter to melt.
  2. Add the onions and cook for 5 minutes, or until the onions are softened and start to brown.
  3. Pour in the tomatoes, sugar, chicken broth, and basil over the onions. Stir to combine.
  4. Cover the Multi Cooker and cook on high pressure for 7 minutes.
  5. Quick release or naturally release the pressure.
  6. Carefully transfer the hot mixture to a blender, and blend until smooth.
  7. Return the soup to the Multi Cooker.
  8. Stir in the heavy cream.
  9. Serve immediately with grated Parmesan, croutons, bread or a grilled cheese sandwich.
