ITALY NAKED RICOTTA RAVIOLI With Burnt Butter1

We’re hitting Italy before the holiday comes to a close, and where better to enjoy a lunch al fresco than this culinary world wonder? We crave pasta all year round, but to combat the SA summer heat Jackie Cameron has whipped up something fresh and delicious: ravioli sans pasta! Get stuck into some naked ravioli in the sunshine with friends for an afternoon of relaxation.

 

Ingredients:

●      300g ricotta

●      2 egg yolks

●      100 g grated parmesan

●      Salt and pepper

●      100g butter

●      Sage leaves to garnish

 

Method:

Mix all the ingredients together, except the sage and butter. Roll into balls and place into the Defy Multicooker. Cook for five minutes. Place the butter in a pan on the gas hob of the Defy Cooker.  Heat and continue to cook until the butter has turned foamy and golden brown. Add the ricotta balls and cook until warmed through. Remove and serve with the sage.
