Ingredients

 

  • For the Dressing:
  • 80 g peanut butter
  • 20 ml lime juice
  • 15 ml soy sauce
  • 1 g grated fresh ginger
  • 3 g ground cayenne pepper
  • 30 ml water
  • 200 g cooked couscous
  • 200 g canned chickpeas, drained and rinsed
  • 100 g cooked sweet potato, diced
  • 100 g cooked spinach, chopped
  • 100 g diced tomatoes
  • 50 g diced red onion
  • 3 g salt and black pepper
  • 10 g chopped fresh dill

Preparation

 

  • In a small bowl, combine peanut butter, lime juice, soy sauce, grated fresh ginger, ground cayenne pepper and water. Mix well. Gradually add water and mix until smooth, set aside.
  • Divide the cooked couscous evenly between two serving bowls.
  • Arrange chickpeas, sweet potato, spinach, tomatoes, and red onion over the couscous in each bowl.
  • Season with salt and black pepper.
  • Drizzle the prepared peanut sauce generously over the ingredients in each bowl.
  • Sprinkle chopped dill over each bowl, serve.
  • Enjoy!
