As the days grow ever-hotter, we look to light and luxurious lunches to break up the day. Today’s World Wonder hails from Beverly Hills, Los Angeles: the timeless and tasty tuna tartare. Elegant and flavourful and packed with high-quality and refined ingredients, this appetiser is designed to dazzle any guest.

Ingredients:

●      Tartare

●      250 g fresh tuna steak

●      2 cm sliced cucumber, cut into small cubes

●      ½ red onion, chopped

●      ½ tbs capers, chopped

●      10 ml soy sauce

●      5 ml sesame oil

●      Juice of 1 freshly squeezed lemon

●      Salt and pepper

Extras:

●      5 cherry tomatoes, cut into wedges

●      Lemon wedges

●      Avocado

●      2 whole, ripe avocados

●      1 whole lemon

●      Salt and pepper

Method:

Cut the tuna into neat 1cm x 1cm cubes. Mix all the tartare ingredients together, except the cherry tomatoes and lemon wedge. Season to taste, adding more lemon juice if needed. Place the peeled avocado in the beaker of the Defy Blender, add the lemon juice and season with salt and pepper. Blend with the Defy Hand Blender with the blending shaft attached. Blend until smooth. Adjust seasoning if necessary.  Press the tuna tartare mixture into a large cookie cutter on a plate, garnishing with the cherry tomatoes, lemon wedges and avocado purée.
