For centuries, bone marrows have been a core ingredient in German cuisine, but Jackie Cameron really feels that the rich and decadent flavours of bone marrow should speak for itself. Spectacular in its simplicity, marrow served in the bone makes for a starter or entree accompaniment with global appeal.
Ingredients:
● 1 beef bone marrow, cut in half lengthwise
● Braai salt, to taste
● 4 sprigs fresh thyme
● Juice of 1 lemon
● Extra: crusty bread
Method:
Pre-heat the Defy Cooker to 200˚C. Generously sprinkle the bone marrow with the braai salt. Stick the thyme into the bone marrow and squeeze the lemon juice over the marrow. Place on a baking sheet and cook in the Defy Cooker for 10 – 15 minutes or until golden brown – just until the solid fat is starting to ooze to liquid fat. Serve with crusty bread.
