Originating from the Lorraine region of France, Quiche Lorraine traditionally features a savoury custard made with eggs, cream, and bacon. Our version adds local flair with Cheddar cheese and a touch of thyme, making it hearty, flavourful, and easy to make in any South African kitchen.

Ingredients You’ll Need
For the Cheese Pastry (Pâte Brisée):
· 250 g cake flour
· 100 g Cheddar cheese, grated
· 5 ml icing sugar
· 125 g chilled salted butter, cut into cubes
· 1 egg yolk
· 60 ml iced water
For the Filling:
· 350 g streaky bacon, chopped
· 1 medium onion, thinly sliced
· 3 cloves garlic, finely chopped
· 15 ml fresh thyme or rosemary, chopped
· 3 eggs
· 250 ml full-cream milk
· 250 ml fresh cream
· Salt & black pepper, to taste
· 200 g Cheddar cheese, grated
How to Make Quiche Lorraine
Step 1: Make the Cheese Pastry
1. Mix the flour, cheese, and icing sugar.
2. Rub in the butter until it resembles breadcrumbs.
3. Add the egg yolk and iced water, knead gently until combined.
4. Wrap the dough and chill for at least 2 hours.
5. Roll out and line two 23 cm tart tins. Prick the bases and chill again.
6. Blind bake at 200°C for 25–30 minutes, then set aside to cool.
Step 2: Prepare the Filling
7. Cook the bacon in a pan until done.
8. Add onion, garlic, and herbs. Cook until soft but not browned.
9. In a bowl, whisk eggs, milk, and cream. Season with salt and pepper.
10. Divide the bacon mixture between the two quiche bases.
11. Pour over the egg mixture and top with cheese.
12. Bake at 200°C for 20–25 minutes, or until the centre is set.
