Scones
Ingredients:
· 500 g cake flour
· 20 ml baking powder
· 2 ml salt
· 125 g butter
· 2 tablespoons white sugar
· 1 egg
· 250 ml buttermilk (or 2 tablespoons lemon juice in 250 ml milk to sour)
Method:
1. Sift the dry ingredients together. Rub in the butter until the mixture resembles fine breadcrumbs.
2. Whisk the egg and buttermilk together and cut into the dry ingredients. Don’t over-handle or overwork the dough, as this can result in a heavy scone.
3. Turn the dough onto a lightly floured surface and knead very lightly.
4. Roll out the dough to 2 cm thick.
5. Cut out the scones using a 5 cm scone cutter, pushing straight down (don’t twist the cutter or the scones will rise unevenly).
6. Place on a lightly floured baking sheet, ensuring the scones just touch each other.
7. Brush the tops lightly with milk.
8. Bake at 220°C for about 10 minutes.
Serve warm with butter and jam.
Homemade Mixed Berry Jam
Ingredients:
· 1 kg mixed berries (fresh or frozen)
· 1 kg sugar
· Juice of 1 lemon
Method:
9. Place the berries in a heavy-based pot and allow to soften over medium heat.
10. When the fruit begins to break down, add the sugar. Stir until dissolved completely.
11. Boil the jam uncovered, stirring occasionally, until it thickens and reaches setting point (you can test this by placing a drop on a cold saucer—if it wrinkles when pushed, it’s ready).
12. Add lemon juice near the end.
13. Store in sterilised jars.
